Bolinhos de bacalhau
Translated from Portuguese this means balls of fish and it's one of my favorite foods to make.
Recipe
1 lb bacalhau (salt cod)
1ΒΌ lb potatoes
2 small onions , finely chopped
1 bunch parsley , chopped
2 eggs , lightly beaten
Vegetable oil (for deep frying)
Soak the salt cod in water for at least 24 hours, changing the water 2 to 3 times.(1) Boil the potatoes with the skin for about 30 to 40 minutes. Remove them from the pot, let cool, then peel them. Mash the potatoes any way you want, I typically just use a fork.(2) Remove the cod from the soaking water.
Bring a pot of water to a boil. Reduce to medium heat and cook the cod for about 8 minutes.(4) Remove the cod from the pot and let cool for a few minutes.(5) Remove the skin and bones with a fork. Place the cod in a bowl and shred it to little pieces with a fork, you can use a food processor to speed up the process.(7)
In a large bowl, add the cod, onion, parsley, mashed potatoes and beaten eggs. Mix thoroughly.(8) Using two tablespoons, shape the bolinhos into an egg or ball shape. Fry the bolinhos in vegitable oil at 375 degrees for a couple minutes on each side until golden brown. Finally place them on a plate lined with paper towel to drain off the excess oil and cool down a little bit.(9) They are best eaten fresh, enjoy!(10)
